My name is Monica Campbell and I have been by Mike's side for 15 years now. He is truly an exceptional husband, great father and extremely creative chef. He really loves what he does to the point of a workaholic. He is so drivin that I don't doubt his dreams will come true for

We moved here because we love the way of life in the country but also to have a base for a great restaurant because Mike could not live without his passion for cooking.

Our mission in Darby is to make a destination spot for people to come and enjoy great food.

Our Business

Little Blue Joint started two years ago, July 23rd of 2006. Mike and Monica ran The Deer Mountain Grill and before that the West Fork Lodge 9 miles up the West Fork Rd. LBJ was an idea that came about when they were coming up with an concept  for great affordable fresh food for everone. They love the Darby area and wanted to stay dispite a lot of businesses coming and going. Mike has big goals for his restaurant. He would like to buy his own place and have a year round greenhouse to supply the kichen with fresh ingredients. Also, a menu that has pizza to fine dining options.

The Funky Chicken

grilled chicken, tomatoes, artichoke hearts, smoked gouda,

and pesto sauce cooked to perfection in our deck oven.

Team Players

Mike believes  his restaurant to be a whole of team players. To make a successful restaurant,

his cooks are trained and taught to prepare each item with love and consistancy.

Terry Spain has been with Mike since his days at Tuscany in Salt Lake City.

He is a team player and we are proud to have someone who believes in us and continues to be a part of Mike's kitchen after all these years.
